Hi! I’m Lauren, the creator behind Meal Plans for Two. I currently reside in Tampa, FL, with my husband. By day I’m a physician assistant, but in my spare time, my heart belongs to the kitchen.
My culinary journey began in the vibrant, food-loving city of New Orleans, Louisiana, where I was born and raised. The rich flavors of Cajun and Creole cuisine have deeply influenced my cooking style and passion for food. I share my favorite New Orleans inspired recipes over on my other food blog, Lauren From Scratch.
Cooking is more than just a hobby for me – it’s a way of life. I handle all the cooking for my family of two, and I’ve discovered that meal planning is the key to staying organized and enjoying delicious, home-cooked meals regularly. Juggling a full-time job and two food blogs leaves little room for daily cooking marathons, so I’ve honed my meal planning and prepping skills to save time and reduce stress.
I created Meal Plans for Two to share my simple, flavorful, and practical meal prepping recipes and meal planning resources with other busy individuals. My philosophy is that meal prepping doesn’t have to be boring or repetitive. I dedicate one day to ingredient and meal prepping, which allows me to quickly assemble and cook meals in just 15-30 minutes on most other days.
While I love cooking from scratch, I understand that it’s not always possible. My meal planning and prepping approach ensures that we enjoy plenty of home-cooked meals without spending hours in the kitchen every day.
